Hamptons’ Pumkin Pie Cheesecake


3 C. Pecans
1/2 C. Brown Sugar

1. Blend in food processor, until consistancy is like brown sugar.
2. Press into pan.


3 lbs. Cream Cheese
1.4 C Sugar
1 tsp. Cinnamon
1/2 tsp. Ginger
1/4 tsp. Nutmeg
1/4 tsp. Cloves
1/4 tsp. Allspice
1/2 tsp. Salt
1 lbs. Pumpkin
1 Tbs. Vanilla
1 Tbs. Lemon Juice
5 Large Eggs
1 C Heavy Cream

1. Cream sugar and cream cheese together until it has a fluffy consistancy.
2. Add cinnamon, ginger, nutmeg, cloves, allspice, and salt.
3. Add Pumpkin.
4. Mix on low setting until all ingredients are combined.
5. Add eggs one at a time, mixing on a low setting.
6. Add lemon juice, vanilla, and heavy cream.
7. Mix ingredients.
8. Put in the desired mold.
9. Bake at 325 degrees Fahrenheit for 30-45 minutes, or until cake is slightly wobbly.
* Do not allow too much air into the batter when mixing it.
